WEST DALLAS — The craft beer scene has taken Dallas-Fort Worth by storm, so it was only a matter of time before connoisseurs started using the local brew in innovative ways.

This summer, a new restaurant called LUCK (Local Urban Craft Kitchen) is setting up shop in Trinity Groves and serving up inventive dishes that are not just inspired by artisan suds; they are infused.

Some of the beer-centric dishes include chicken wings marinated in buttermilk and IPA, and a brown ale shrimp and grits dish that may make the final menu cut. LUCK will use only local craft beer to flavor its dishes.

LUCK recently made its debut to folks in Dallas at the Savor Trinity Groves food event. Patrons tasted a cheesy gordita with habanero-pickled onions doused in a spicy borracha salsa, which was reduced with a Four Corners signature brew. Chefs and owners Jeff Dietzman, Daniel Pittman, and Ned Steel created buzz around the scene last fall with another unique concoction — a homemade vanilla bean ice cream flavored with Lakewood Brewing Company’s Temptress stout.

In 2010, Joe Palladino’s phone rang. On the other end was Philip Romano, his partner in three Dallas restaurants, asking him to come out to the undeveloped 65-acre lot Romano co-owned in West Dallas, Texas. The restaurateur said he had something to show his friend. Palladino arrived to find Romano excitedly sketching out a development plan — a row of restaurants side-by-side near the Trinity River that bisects Dallas.

Palladino, a fellow restaurateur, was astonished at how quickly the plan evolved before his eyes. “He’s like a mad scientist, just putting stuff together,” he says of watching his partner of 15 years work. What Romano was inventing on the spot was a restaurant incubator, Trinity Groves, which began operating in 2012 and so far has two restaurants serving customers, with more expected to open this year. For the remaining 20 or so spots in the incubator, the founders have chosen 12 more restaurant concepts from about 270 applications.

The attendees of Savor Trinity Groves, one leg in the Savor Dallas food festival series, partook in a one-of-a-kind experience Thursday night catered by nine new or soon-to-be restaurants in the neighborhood.

Located at the base of the Margaret Hunt Hill Bridge, Trinity Groves is an up-and-coming area dedicated to independent businesses. The vendors that participated in the event Thursday are undoubtedly shaping a tasty future.

Savor Trinity Groves was a test of tactics, as patrons filled the venue and lines for the food booths grew longer as the night progressed. The venue sold cleverly designed plates that held both mini portions of food as well as wine glasses so patrons could wait for the next dish while wining and dining.

On March 4, 2012, the Monday after the weekend-long celebration that opened architect Santiago Calatrava’s bone-blanched Margaret Hunt Hill Bridge, the neighborhood that found itself suddenly connected to the snarl of interstates a half-mile off, went back to looking the way it had for the better part of the previous century. West Dallas’ corrugated steel warehouses and low-slung brick storefronts that date back to the 1920s and 1930s hardly took notice of the few extra cars that began rolling down a recently widened Singleton Boulevard. The vacant lots that had been quickly laid with decomposed granite and crushed concrete for parking were empty after the brief deluge of traffic. And yet, there the bridge loomed, an indelible ribbon of bent steel in the sky, while West Dallas remained—at least on the surface—the same.

The first food-related tenant at Trinity Groves, a nascent food and entertainment district taking shape at the foot of the Margaret Hunt Hill Bridge, makes its official debut Thursday.

The brainchild of caterer and cooking instructor Sharon Van Meter, 3015 Trinity Groves will serve as the site of catered events, corporate team-building exercises and cooking classes. Thursday evening it will host a fundraiser for Hunger Busters, a nonprofit that provides meals for children in need.
