Kitchen LTO, the “permanent pop-up” space at Trinity Groves, has announced the chef and designer winners of round one of the pop-up game: Norman Grimm and Coeval Studio. They will be in charge of LTO‘s first pop-up, scheduled to open September 3 for a four-month run. The dish Grimm prepared for the open-to-public tasting on May 30, in which the public voting began, was a rice crispy tartare. Voting finished on June 10.
I can’t say I’m terribly surprised. Grimm, who was until recently executive chef at Acme F&B, brings much more experience to the table than any of the other chef contestants did, with a resume that includes Rubicon, Jardiniere, Tra Vigne and the Dining Room at The Ritz Carlton in California, along with Mercury, Nosh Euro Bistro and York Street in Dallas.
